COCONUT SAMBAL RECIPE

 

RECIPE FOR COCONUT SAMBAL:

INGREDIENTS:

1 cup shredded coconut

Lemon-sized tamarind

5 to 6 dried red chillies

15 shallots

Salt

FOR SEASONING

Oil

1/2 teaspoon mustard seeds

1/2 teaspoon urad dal

Curry leaves

INSTRUCTIONS:

Grind the coconut, tamarind, red chillies, shallots, and salt in a mixer or food processor until they form a coarse paste.

Heat some oil in a pan and add the mustard seeds, urad dal, and curry leaves.

Once the mustard seeds start to splutter and the urad dal turns golden brown, add the ground paste to the pan.

Fry the mixture for 10 minutes over medium heat, stirring occasionally, until it turns light brown and the raw smell of the ingredients disappears.

Remove from heat and let it cool down before serving with rice or any other dish of your choice.

EXCELLENT DISH FOR HOT RICE

Note: Adjust the amount of red chillies and salt to suit your taste. You can also add a pinch of sugar or jaggery for a slightly sweet taste.
